Soup − Melon and Basil

1.2 Whole, Melons − rock2.75 grams, 6 Tablespoon, Sugar − Caster
3.175 ml, 0.75 cups, Water4.1 Whole, Lime Rind − Finely Grated
5.1 Whole, Lime − Freshly squeezed Juice6.45 ml, 3 Tablespoon, Basil − Fresh (shredded)

1.Cut the melons in half and scoop out the seeds
Using a melon baller scoop out about 20 balls
Scoop out the remaining melon and place in a blender
2.Place the water − sugar and lime juice in a small pan on a low heat
Stir until the mixture has blended.
Bring to the boil for 2-3 minutes
Allow mixture to cool
3.Pour Half the mixture into the blender
Blend until smooth
Now add the remaining mixture and Lime Juice to taste
4.Place in a boil
Add the basil
Leave to chill in the fridge
5.Garnish with Basil Leaves
